This tasty treat is a no bake recipe which means whether it’s cold or warm outside you can make them year round! Since you will need to let your mixture sit in the fridge for an hour it’s also a great recipe to do when you have other projects around the house. Even though it says to let them mixture sit for an hour, I ended up leaving mine in about 2 hours as I was doing other things.
This recipe isn’t sweet unless you use sweetened coconut flakes. Personally I’ve purchased the sweetened coconut flakes in the past and thought they were overly sweet so I stick with the unsweetened. With this recipes I was looking more for a quick protein treat that was ready and waiting in the fridge.
We’re also using Life’s Abundance Vanilla Plant Protein Powder in this recipe. As you know, it the brand that we always use because it doesn’t overpower a recipe. Plus it’s our daily protein powder for our smoothies so we always have it on hand. It doesn’t contain added sugar and doesn’t have artificial flavors, preservatives or colors. That being said, it’s not like a commercial protein powder that has sugar and possibly the artificial flavors, preservatives or colors. However your body will appreciate that you are using a healthy option instead of a gunky version with crummy ingredients. If you’d like to purchase it, we have a special at the bottom of this post.
If you’re not a fan of walnuts, you could substitute another nut. A good substitution would be pecans. In this recipe we also chopped them pretty fine since we didn’t want to bite into a large walnut piece.
No Bake Coconut Snowball Recipe
Ingredients:
- 1 8oz cream cheese, softened
- 1 8oz can crushed pineapple or pineapple tidbits
- 1/3 c. Life’s Abundance Vanilla Protein Powder (purchase here)
- 1 c. chopped walnuts
- 2-3 c. coconut flakes (unsweetened or sweetened depending on your preference)
Directions:
Make sure your cream cheese is softened because you are going to mix this with a spoon. I let mine sit out for almost an hour because I unwrapped it.
In a medium size bowl, combine your cream cheese, drained crushed pineapple and vanilla protein powder. If you don’t have crushed pineapple, you can substitute pineapple tidbits. If you do that you can put them in your food processor for a couple of spins and they’ll be perfect for you to use.
Once combined, stir in your chopped walnuts. If you purchase walnuts halves or pieces measure out a cup and then chopped in the food processor.
Cover bowl and refrigerate for 1 hour.
After an hour, roll into 1-2 inch balls. I used a cookie scooper.
Place coconut flakes on a plate and roll each ball in the coconut flakes. I used unsweetened and since the Life’s Abundance Vanilla Protein Powder is also unsweetened, this was on the low side of sweetness. If you prefer to have a sweeter Coconut Protein Ball purchase sweetened coconut flakes.
Refrigerate for at least 4 hours to set or overnight. Store in an airtight container and keep refrigerated until you are ready to eat.
