Healthier Peanut Butter, Oatmeal And Dark Chocolate Chip Cookies Sweetened With Honey

I am a cookie monster! I love cookies and I’ve indulged on cookie overdose more times throughout my life than I care to admit. 

Most cookies are loaded with sugar and brown sugar and salt. These cookies are sweetened with honey and I don’t add salt. I also use Crazy Richards creamy peanut butter which has no sodium. Yay for us low sodium people!!  You can also use Crazy Richards crunch peanut butter which has no sodium. We’ve used both so I use what we have on hand.

These are a thicker cookie so 1 (or 2) satisfies you. They also don’t spread much when cooking so I haven’t had to be concerned with that dreaded “cookies run together” issue.

Ok, that’s really not an issue because it turns into 1 giant cookie and I love cookies any shape or size!

I’ve been using parchment paper for everything lately and I don’t know why it took my so long to use it! It’s makes clean up a breeze and I’m all about that!

The cookies are freezer friendly but I think the longest they’ve lasted is 2 weeks in the freezer because when I make these, we have 1 or 2 each day. They are addicting but since they are filling, you don’t need to eat 10…unless you really, really want to!

I use Life’s Abundance vanilla protein powder in these. I don’t know how they will turn out if you don’t use it but this is the plant based protein powder we use each day in our smoothies and for all our recipes. It doesn’t have an overpowering taste which is perfect for these cookies and everything that I use it in.

It’s smooth and works well because it’s not gritty. It is gluten free, soy free, dairy free, grain free, non-GMO and doesn’t contain added sugar, no artificial flavors, colors or preservatives.

It also comes in chocolate which would make these super chocolately! I haven’t tried the cookies using that. If you do, drop me a comment and let me know how you liked them.

Healthier Peanut Butter, Oatmeal And Dark Chocolate Chip Cookies Sweetened With Honey Recipe

Ingredients:
  • 1 c. all natural peanut butter
  • 1/2 c. honey
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 c. quick cooking oats
  • 1 1/2 to 1 3/4 c. dark chocolate chips (the more the merrier)
  • 2 large eggs
  • 1 scoop vanilla protein powder (we use this brand)
Directions:
Preheat oven to 350 degrees.
In a bowl, beat peanut butter, honey, eggs and vanilla.
In a separate bowl combine oats, protein powder and baking powder. Whisk together.
Add the dry mixture to wet mixture and beat until combined.
Stir in chocolate chips.
Drop batter by tablespoon onto non stick baking sheet (I use parchment paper on the baking sheet).
Bake at 350 for approximately 10-13 minutes or until center is cooked through.  Ours has been taking 13 minutes on the first batch and second batch usually takes 12 minutes.
*** You can use creamy or chunky peanut butter but ingredients should be only peanuts and salt or just peanuts. If you’re looking for sodium free peanut butter, use Crazy Richards. That’s the one we use.
